Lol yes I try to stick to properly raised me for all the meat I buy, and trade off quantity for quality.nnBut that said, I can't entirely agree with you. Yes, it can't compare to properly raised Berkshire pig, but a good marinade or brine can work wonders on the supermarket stuff.

Don't waste your time with pork unless your pig was raised humanely the old school way eating a varied and healthy diet out in the pasture..not the factory farm way. No amount of brine can bring flavor to the poor thing, raised on a low fat awful diet in the dark. :)

The lamb "youvetsi" is my favorite. I love the herbs you've used to braise the shanks here Giff! It's a deparature from the Greek version which would use cinnamon, savory and bay to flavor the dish ... and you've completely and utterly got me craving this now!

a pinch in my world is literally the amount of spice you get when you "pinch" your thumb and forefinger together. It is smaller than a quarter teaspoon.

Savory is an herb that can be a bit tricky to find. It is used in french cooking with meats and beans. Personally I can only get it in ground form. It is considered closest to marjoram, so you can leave it out (I used a very subtle amount here), or use some marjoram, or a bit more sage.

Want to make this! Perfect food when you're stuck inside, in the middle of a snowstorm. Erm, just one question though - what is "a pinch of savory"? What's "savory"?!

Wow, what a dish. & I'm with you, one of the things I love about cooking is all the places you can be inspired by & draw ideas from to meld into one good dish
