I am a big fan of beets and love them roasted. Just a few years back I got weird looks from the people selling beets at the farmer's market when I politely asked them to discard the leaves, as I did not want to carry extra weight back home but eventually I've learned to love them.

Beet greens rock! The violets are incredible - make this southwesterner once easterner very homesick! Did you know you can coat them in lightly whipped egg white then fine sugar, let them dry and they're no longer tasteless? They're gorgeous on a chocolate cake.

Look what I missed, fool that I am!
I'm glad that you are coming around to greens these days. We Italians love our greens. Especially wild bitter weed greens. A classic from Puglia is our orecchiette con cime di rape. I love greens best with cannelini beans, then any kind of pasta. On the whole we tend to enjoy them cooked a long time. Others will say we overcook, but it's tradition and we grow up with them cooked this way :)
That dessert looks awesome. Really!
Have fun at the market.

Stacey: pavlova's are a sweeter dessert than I normally go for, but especially when the summer fruit and berries are in full swing, are delicious

TW: our violets ended up being the boring kind, so purely for decoration. It made for a fun task to keep 4 year old hands busy and out of trouble however!
