Fennel Two Ways: Cold Salad and Hot Gratin

I’m a huge fan of fennel. In the summertime, I’ll make cold fennel salads, and in the winter, I’ll do gratins. I make these slightly differently every time, but here are the basics:

Fennel Salad

For 4-6 people
2 fennel bulbs (3 if they are small)
1 stalk of celery
mint (or fresh oregano)
1 navel orange
olive oil
salt and pepper
optional: mild, black mediterranean olives

Wash the fennel bulbs and remove the very tops so you just have the bulb. Remove the outer layer if it seems a little woody. Halve them and cut out the dense core, and then halve them again (so you have quarters). Using a mandoline at its thinnest setting, slice up the fennel (watch those fingers!) and place in a large salad bowl.

Peel the navel orange, separate the segments and slice them into half inch pieces. Add to bowl. (Note, when I first had this in Italy, it was served with amazing blood oranges, but I haven’t been able to get quality blood oranges where I live.)

Thinly slice up the celery and add to the bowl (the older photo used in this post had thicker slices of celery, but I’ve found myself liking a thinner cut).

Finely chop up a handful of mint, or fresh oregano.

Drizzle a little olive oil and a pinch of salt and pepper and mix up. The Italians also sometimes add cured black olives to this, sort of like a kalamata, but not quite as strong.

Fennel Gratin

For 4 to 6
3 or 4 fennel bulbs
Parmesan cheese
2 slices of farm bread for breadcrumbs
Unsalted butter

Get some salted water boiling in a large pot and butter a baking dish.

Wash the fennel bulbs and remove the very tops so you just have the bulb. Save the green fronds if you have them. Remove the outer layer of the bulb if it seems a little woody. Halve them and cut out the dense core. Lay them flat and slice into quarter inch slices.  Boil in the salted water for 5 minutes, drain, and then add to the baking dish.

Mix in about a half cup of grated parmesan cheese, a pinch of black pepper, and a drizzle of olive oil. Chop up some of the fine green fennel fronds and mix in.

For bread crumbs, I never buy store breadcrumbs. I just toast a couple of slices of farm bread until lightly brown, and then chop it up pretty finely. I prefer chopping to a food processor because I like having different (and larger) sizes. Sprinkle the bread crumbs on top.

Add a bit more grated cheese to the top, and dot with unsalted butter.

Bake at 375 F for 30 minutes.

Flageolet and Meatball Peasant Stew


I love Autumn. I love the temperature, the colors, the clothes, and of course the fact that my favorite cooking style fits the weather more naturally. This recipe falls squarely into that bucket, and was a huge hit with Lisl and a friend who came over this evening.  It combines a homemade Italian meatball with a French-style peasant stew.

Meatballs
1 lb ground pork shoulder
1.5 tsp fennel seed
1 tsp kosher salt (halve if you use table salt)
1/4 tsp hot red pepper flakes
12 black peppercorns

Rest of Stew
1 lb dried flageolet beans (alternative: great northern)
1 large spanish or vidalia onion, diced
4 carrots, diced
3 celery stalks, diced
large handful of white button mushrooms, diced
1/2 to 1 cup diced tomato
3 or 4 cloves of garlic, minced
handful of parley
2 fresh rosemary sprigs
1/2 cup dry vermouth or white wine
1 tbsp tomato paste

Cook the flageolet beans until al dente: place in a large pot with 1″ of water above the top of the beans. Add 3 bay leaves, bring to a boil, then remove the lid and simmer. Soaking beforehand will speed up cooking time. While the beans cook, do the next few steps.

Pound up the fennel seed, peppercorns and pepper flakes with a mortar/pestle, then add to the ground meat along with the salt. Mix together then mold into meatballs about 1.5″ in diameter. Heat up your stew pot (I use a dutch oven) on med-high heat with a little olive oil and brown the meatballs. Then set them aside and turn off the heat.

Spoon out most of the oil left in the stew pot, leaving enough to coat the bottom. Turn the heat back on to med-low. Cook the onions until translucent, then add the garlic, celery and carrots. Cook for a few minutes, then add the diced tomato and mushroom.

Separate the parsley stems and leaves, setting the leaves aside. Create a bouquet garnis by tying the parsley stems, rosemary sprigs, and 1 bay leaf together with kitchen twine. Add the bouquet garnis to the pot, and continue to let the vegetables gently cook.

Once the beans are al dente, drain or optionally reserve the cooking liquid. Add the beans and meatballs to the stew pot, add the wine, and add either water or the bean cooking liquid until the liquid level is about three-quarters up to the top of the food. Make sure the bouquet garnis is immersed, cover and either place the pot in a 350F oven or let simmer on the stove top.

After 40 minutes, taste for salt and gently stir in the tomato paste.

Remove about 1/2 of beans and vegetables to a food processor and puree.  Return to the pot and continue to cook until the beans are soft and the flavors have melded.  This step improves the texture, thickening the stew (I hate the common use of flour or starch to thicken).

Chop up the parsley leaves waiting in the wings all this time. Serve with the parsley and a little fresh pepper scattered on top.

Chard and Cranberry Bean Gratin

It feels like forever since I’ve had a moment to write a post.  Interesting recipes have come and gone, never written down, photo-less, and unblogged.  Furthermore, it sucks not having the time to keep up with the blogs of all the friends I have made in the food blogosphere. OK, shameless plug complete! Let’s talk about this dish, which was a tad involved but oh so good.  Hearty vegetarian fare, although suited for a cooler evening.  It is inspired by Alice Waters’ Chard Gratin.  I just turned it into a meal. It has been a few weeks, but here is my best recollection of the dish:

Chard and Cranberry Bean Gratin

Large bunch of chard, leaves and stems separated
1 onion, diced
2 or 3 carrots, diced
1 stalk of celery, diced
1/2 lb of cranberry or borlotti beans
1 tsp fresh winter savory, finely chopped
salt and pepper
4 tbsp unsalted butter
3 tsp flour
3/4 to 1 cup milk
1 cup fresh breadcrumbs

I was working with dried cranberry beans. Put them in a pot with water an inch over the top of the beans, tossed in a couple bay leaves, brought to a boil for a couple minutes, then let simmer until just tender (time will depend on whether you soaked beforehand). Save 1/2 cup of the cooking liquid and drain the rest.

Make breadcrumbs by placing stale or fresh bread in a food processor. Spread them out on a baking tray, dot with pieces from 1 tbsp of butter, and toast in a 350F oven until lightly golden.

Bring a large pot of water to a boil and cook the chard leaves for about 3 minutes, then remove with a slotted spoon and let them drain and cool.  Dice the chard stems and cook them in the boiling water for 5 minutes, then drain.

Melt 2 tbsp of butter in a large (ideally oven-capable) skillet and saute the onions on low heat until translucent.  Add the carrot and celery and continue to cook for 10 minutes.

Add the beans and the bean liquid and/or some white wine, and continue to let it simmer (turn up the heat a tad, if necessary), stirring occasionally.

Squeeze much of the excess liquid out of the chard leaves and coarsely chop them.  Add the chard stems and chard leaves to the skillet.  Add the winter savory (Note: I think oregano or tarragon would also work).  Let simmer for a few minutes.

Sprinkle and stir in the flour, then stir in the milk.  Cook for 5 more minutes, adding more milk if the mixture gets too thick. Add salt and pepper to taste.

If you are not using an oven-friendly skillet, transfer to a baking dish.  Spread the breadcrumbs on top, dot with bits from the last tbsp of butter, and bake for 30 to 40 minutes in the 350F oven.

Summer meals: gratins and sauces

I’ve been on a gratin kick again the last few days.  The first one was a remake of an eggplant, zucchini, basil and cheese gratin dish I blogged a year ago.  It was one of my favorite meals of 2008, and it struck gold again. It should have been enough for 4 people, but was so good, Lisl and I pigged out and finished it off in one sitting! I’ve gone back and updated the recipe if you are interested.  Make it while everything is in season!

I also grilled a skirt steak last night and wanted to share/record the sauce after very good reviews from our guests (no photo, was too busy getting food on the table).

Mustard Sauce for Skirt Steak
1 medium shallot, finely chopped
1 1/2 cup chicken stock
1 tbsp grain mustard
2 tbsp dark rum
1 tbsp apple cider vinegar
salt to taste

On medium-low heat, saute the shallots in a splash of olive oil in a medium-sized pan for a few minutes, until they soften. Pour in the chicken stock and bring to a boil. Stir in the mustard and rum and reduce to a light sauce consistency, then stir in the vinegar. Taste and add a small amount of salt if you desire.

Note: an important thing with skirt steak is to give it lots of salt and pepper before you toss it on the grill, and then thinly slice across the grain (I usually cut it into 6 inch lengths before grilling, so that it’s easier to slice).

Roasted Lamb with Grain Mustard and Soy Sauce

Lisl first made this lamb roast not long after we met. If I went for sensational titles I’d call this the “how to impress your new boyfriend without slaving in the kitchen, but make him think you did” lamb roast.  It actually remains my favorite way to cook lamb by a long shot, and it is so easy to do that it isn’t really a recipe but a simple process (which is one reason why I have time to blog it at the moment).

Lisl prefers to do this roast with a leg of lamb, but we used a boneless lamb sirloin roast and while it fell apart a bit when slicing, I found this cut to be incredibly good.  I also loved the gratin we served with it, which I’ll describe at the bottom of the post.

Cauliflower and Fennel Gratin (say “bechamel” 10 time fast)

My predilection for comfort dishes means that gratins, bechamel and cheese are recurring themes, but before I begin, forgive me a small rant: there is a fine line between a dish that is richly delicious, and one that is so packed with cream and butter that you can barely eat a second bite.  Too many restaurants err on the wrong side of that line.

I remember reading the author of Cooking School Confidential write about learning the optimal way to prep potatoes for mashing in order to get as much butter into them as possible.  My first reaction was “interesting” and my second was “maybe this is why I never like the mashed potatoes in restaurants.”

It reminds me of watching Anne Burrell explain, as she grabbed a huge handful of salt, how restaurant food is tasty because it is “better seasoned.”  And I thought, “is that a euphamism for salty?”  It is true that many tentative home cooks under-salt in the cooking process, but at least guests have a chance to rectify that.  I find American Italian restaurants to be the worst offenders of over-salting.

This isn’t just about health, although that is relevant to this topic, but just the observation that more is not always better.  I understand a restaurant’s desire to exude luxury, but you shouldn’t need a red wine strong enough to punch you in the jaw to make it through more than a few bites of a dish.

Now isn’t that a marvelously hypocritical way to introduce a dish with bechamel (one with more butter than flour even!) and cheese?!  This dish is not something I would eat every night, but it was utterly delicious and while it went right smack up to the aforementioned line, it stayed just on the right side.

I’d quip that I ate my hypocrisy most happily, but perhaps the serious  analysis is that the term “too rich” is subjectively like what the judge said about pornography: “I can’t define it, but I know it when I see it.”

Pancetta, Chard, Cranberry Bean and Gouda Gratin

I spent last week in San Francisco and missed my kitchen, although I did have a few good meals with friends, colleagues and even the Foodbuzz editorial team. Hence today I felt the need to get in the kitchen and prep a civilized lunch for a cool spring day. This cranberry bean gratin emerged out of the available ingredients, and we happily polished it off with a glass of white wine. I decided it is a keeper (even our 3-yr old loved it), so the recipe is below.

Meeting the Foodbuzz team was great fun (that’s me second to the left). We ate lunch on the water at La Mar and had some great peruvian-style seafood dishes. I continue to be impressed with the passion of the Foodbuzz team, and they are all super-nice people. I enjoyed our conversation about the food blogosphere, the rise of twitter among food bloggers, and the changing Foodbuzz site itself, and look forward to seeing their business grow and evolve.

Pancetta, Chard, Cranberry Bean and Gouda Gratin

0.15 lb pancetta (one thick slice), diced
1 medium onion, chopped finely
4 small cloves of garlic, minced
large bunch of swiss chard (instructions below)
2 medium tomatoes
1/3 cup white wine
1/3 cup reserved bean cooking liquid
1 tsp tomato paste
1 to 2 cups fresh or soaked cranberry beans
3/4 cup fresh breadcrumbs
3/4 cup grated gouda cheese
2 tbsp unsalted butter
several sprigs of thyme
olive oil
salt and pepper

Place the cranberry beans in a large pot, fill with water an inch above the top of the beans, and add 1/4 tsp of salt, 1 bay leaf, and 2 sprigs of thyme. Bring to a boil then lower to a gentle simmer. Cook uncovered until tender (start checking around 20 minutes). Reserve about 1/3 of a cup of the cooking liquid, drain and set aside.

Pre-heat oven to 375F.

Prep the chard by washing the leaves and removing the stems, discarding all but two of them (keep the two firmest, freshest stems). Chop the leaves, and thinly slice the two stems.

Grab a big hunk of country bread (stale or fresh), remove the crust, and turn into breadcrumbs in a food processor.

In an oven-ready large skillet (I like to use cast-iron), heat up a splash of olive oil and cook the diced pancetta on medium heat for 2 minutes. Lower the heat to medium-low and add the diced onion, and cook until the onions turn translucent. Add the chard leaves, chard stems, minced garlic, a splash of olive oil and a pinch of salt. Cook until the chard leaves are wilted, and then stir in the cranberry beans, chopped tomatoes, white wine, reserved bean liquid, and about 1/4 teaspoon of fresh thyme leaves. Cook for 5 to 10 minutes, stir in the tomato paste and 1 tbsp of butter, taste for salt, and cook for 10 minutes more.

Turn off the heat. Sprinkle a mixture of breadcrumbs and grated gouda cheese on top. Cut a tablespoon of butter into small pieces and sprinkle around the top. Place in the oven for 20 to 30 minutes. If the top is not browned, you can finish it off with about 30 to 60 seconds under the broiler.

Thanksgiving Pt 2: Potato & Fennel Gratin

While much of our Thanksgiving dinner was pretty traditional to our family, Lisl and I decided to change up the usual scalloped potato dish and add fennel to the gratin. Stacey, of Stacey Snacks, mentioned that Ina Garten had a great recipe, and I found a version on the Food Network website. I made a few changes, reducing amounts and layering rather than mixing in a bowl (I just love how attractive the layered approach looks when it comes out of the oven).

The results received universal approval from the adults at the table (munchkin, not so much, but the three-year-old palate is a frustrating thing to cook for). This was a convenient dish as well since I was able to bake it 90% done before the turkey took over the oven, and then just finish it off while the turkey rested.

Potato & Fennel Gratin, adapted from Ina Garten

4 to 6 medium-large idaho/russet potatos
1 large fennel bulb
1/2 large spanish or vidalia onion
1 tbsp butter
1 tbsp olive oil
2 cups gruyere cheese, thickly grated
1 3/4 cup heavy cream
salt and pepper

Thinly slice the onion. Remove the fronds and 1/4″ of the base of the fennel, cut in half, remove the core, and then thinly slice.

Preheat oven to 350F.

In a saute pan, heat the butter and olive oil on medium-low and cook the onions and fennel for about 15 minutes, stirring occasionally. While this is cooking, thinly slice (1/8″ or 2mm thick) the potatoes.

Butter the bottom and sides of a baking dish and place a first layer of potato, slightly overlapping each piece like fish scales. Sprinkle some gruyere cheese, a small amount of salt and pepper, and pour a little cream. Add a layer of half of your onion and fennel, and repeat with the cheese, salt, pepper, and cream. You will add another layer of potato, a layer of onion/fennel, and a final layer of potato, interspersing each one (including the top) with cheese, salt, pepper, and cream.

Place in the oven and bake for 1.5 hours until the top is nicely browned and the potatoes are very tender.

Fennel Gratin, Roast Chicken, and a night to remember

At 11pm, I felt relief. A few minutes later, I felt admiration for McCain showing his true colors by conceding with dignity. Then Barack stepped up and said what we all knew was true: tonight we have only opened the door — now the hard work truly begins. We shall see what kind of President Barack Obama really becomes, but I am glad this country chose hope and change. Americans believe that our country is a beacon, and it is time we earned that belief once more. This country has a lot to do and fix, but tonight, I am happy.

But wait, food what when how?

Tonight we made two dishes: a roasted chicken stuffed with olives and potatoes from Stacey at Stacey Snacks, and a fennel gratin from an Alice Waters recipe. Both were absolutely delicious.

Fennel Gratin, slightly adapted from Alice Waters’ The Art of Simple Food

2 large fennel bulbs
2 tbsp butter
1 1/2 tbsp flour
1/2 cup milk
1/3 cup fennel cooking liquid
Salt
pinch of ground nutmeg
pinch of hot hungarian paprika
pinch of hot red pepper flakes
1/2 cup grated parmesan cheese
1 tbsp of minced fennel frond

Cut the fennel bulbs in half and then into wedges. Mince up a small amount of the fennel fronds and set aside. Boil the wedges in salted water for 5 minutes. Remove the fennel with a slotted spoon and set aside. Reserve 1/3 cup of the cooking liquid.

Next, make a white sauce by melting the butter on medium heat, adding the flour, and cooking for a couple minutes, whisking constantly. Then slowly add the milk and fennel cooking liquid in small amounts, whisking as you go. Once the liquid is mixed in, lower the heat to a very soft simmer and cook for another 15 minutes. Turn off the heat and stir in a couple of pinches of salt, and the nutmeg, paprika, pepper flakes, and parmesan (note: Waters uses cayenne pepper instead of the hot paprika and pepper flakes).

Butter a baking dish and spread out the fennel wedges, and spoon the sauce on top. Bake in an oven set at 375F or 400F for 30 minutes or so (note: Waters calls for 375F, but we had the oven set to 400F since we were also finishing the chicken roast). When the tops are browned, remove, sprinkle with a little salt, pepper and the fennel fronds, and serve.

Comment: I found that the amounts for the white sauce led to a thick sauce that did not cover all of the fennel, but that actually ended up being a good thing, keeping the dish from being too rich and allowing you as the eater to choose what kind of mouthful you wanted.

The other part of the meal was a roast chicken with potatoes, olives, capers, rosemary and other good stuff. We spotted this recipe on Stacey Snacks (link), and Lisl prepped and cooked the dish. It was marvelous. Follow that link to the recipe, and listen when Stacey says to make sure that the potatoes are cooked before you put it all in the oven, because the potatoes stuffed inside the chicken will not cook all that much, even in the oven for 1 hr 15 minutes at 400F.

Eggplant, Zucchini & Basil Gratin

[Update 8/30/09 a year later, I made this dish again and loved it as much, if not more.  I am updating the recipe to be less of a record of the original creation and more of a general recipe).

I seem to be on this vegetarian comfort food kick. Tonight’s dinner was a lovely success, layering eggplant, zucchini, cheese, breadcrumbs and basil. I completely winged it (having only about 2 brain cells left to rub together after a late night and a long day) but at the first bite Lisl and I were both at “wow!” I suppose I shouldn’t be surprised… melted veggies with gobs of cheese and olive oil? As Mr. Powers would say, yeah baby!

3 golden zucchini (green or summer squash fine as well)
2 medium Japanese eggplants, peeled (Italian eggplant fine as well)
1 cup coarse bread crumbs (whole wheat or rustic white)
large handful of basil leaves
1/2 cup coarsely grated mozzarella cheese (version 2: manchego)
1/2 cup coarsely grated monterey jack cheese (version 2: cheddar)
1/2 cup coarsely grated parmesan cheese
extra virgin olive oil
salt and pepper

In a food processor, pulse your bread into coarse breadcrumbs. Preheat oven at 350F.  In a baking tray, spread out the crumbs and bake, occasionally stirring around, until lightly browned.

Peel the eggplant with a vegetable peeler and slice lengthwise into slices about 2 millimeters thick.  (Optional: salt both sides of the eggplant and place in a colander to drain for about 20 minutes. Dry the slices with paper towel. Then slice the zucchini the same thickness.

Heat a large pan with olive oil on medium to medium-high heat and saute your eggplant and zucchini for 30-40 seconds a side, adding more olive oil to the pan between each batch. You don’t need to cook the slices all the way, just enough to soften them.

In a deep, medium-sized baking dish baking dish, layer your gratin by alternating the ingredients as you wish, or in this order:

eggplant
a mixture of the 3 cheeses
zucchini
salt and pepper
scattering of breadcrumbs
layer of basil leaves
cheese
eggplant
zucchini
salt and pepper
cheese
basil
eggplant
zucchini
salt and pepper
final, more thorough layer of cheese
final, more thorough layer of breadcrumbs

Don’t be afraid to cut your slices of eggplant or zucchini into the necessary size to fit the gaps in a layer. Where it calls for salt and pepper, just add 2 or 3 turnings of a grinder.  The order of the layers and ingredients is anything but scientific — the flavors will blend together nicely.

Optional: drizzle some olive oil over top.

Baked for 50 minutes at 350F. You get a delightful crust and a totally melted core. The layer of basil really permeates this dish nicely. It’s rich, but oh so satisfying. This dish can handle a hefty, peppery red wine should you be so inclined.
